Vegan Halloween Recipe: Eyeballs and Worms

1 lb of Spaghetti

14 oz of Tofu

3 Cups of Drained Pinto Beans

1/2 Cup of Vegan Panko Bread Crumbs

1/3 Cup of Nutritional Yeast

2 TBSP of Garlic Salt

2 TBSP of Olive Oil

1 TBSP of Chives

1 TBSP of Basil

1 TBSP of Oregano

1/2 TBSP of Thyme

1/2 TBSP of Marjoram

2 TSP of Granulated Onion

Preheat oven to 375 F and lightly oil a cookie sheet. Add crumbled tofu, drained beans, nutritional yeast, panko, garlic salt, chives, basil, oregano, thyme, marjoram, and granulated onion into a high power blender. Slowly, drizzle in olive oil as the mixture becomes homogenous. Form the mixture into 2-inch balls by rolling 1/4 Cup in between your palms. Place on baking sheet and top with fresh cracked black pepper. Bake for 30 mins or until the "meatballs" are no longer soft. While "meatballs" are baking, boil spaghetti according to manufacturer's instructions. Once meatballs come out of the oven, heat your pasta sauce, store bought or my recipe (linked above), in a very large skillet. Once the sauce is brought to a simmer, add your drained spaghetti and "meatballs". Stir until everything is well coated. Serve with a dash more of Nutritional yeast and enjoy your spooky meal.
