Craveable Curried Tofu

1 lb of Tofu

1 Sweet Onion

1/4 Cup of Coconut Milk

3 TBSP of Pickle Juice

2 TBSP of Curry Powder

1 TBSP of Ground Cumin

1 TBSP of Ground Coriander

1/2 TBSP of Turmeric

1/2 TBSP of Cayenne Pepper

1/2 TBSP of Dried Sweet Basil

1 TSP of Salt

5 TBSP Olive Oil

Drain and dice tofu into small 1/4-inch pieces, then toss with 3 TBSP of olive oil. Slice onion into long pieces, then add to sauce pan with the remaining olive oil. Let onion cook for 5 minutes, then add coconut milk, pickle juice, curry powder, ground cumin, ground coriander, turmeric, cayenne pepper, and dried sweet basil. Cover and let simmer. In a preheated frying pan add tofu and salt. Stir fry tofu over medium-high heat until lightly browned and slightly crispy. Once tofu is cooked to desired crispiness, add tofu to curry sauce and stir. Let simmer until sauce reaches your desired thickness. Serve over white rice or on naan. Enjoy!
